‘Scribbling around in my head’ is a wonderful description of overwhelm!
I too think ‘niche’ is overrated. I don’t have one. I just write down the words in my head and let them sort themselves - and me! - out. Although the words are pretty much unplanned and random I can at least be certain that they’re representative.
Representative of me, I mean, at the time I’ve written them. And I reckon that’s fine. ☺️

In my personal experience, niching down is possible and can be quite fulfilling too but only after a decent amount of experimentation! My compass for choosing what to focus on is how I feel about it, not strategy. And it's OK to change niche every now and then, it is part of the experimentation isn't it. We never cease to change as human beangs, our writing reflects that.
Re food writing - food writing helps in not having to put myself under a spotlight. I'm building confidence for when I may want to write more about myself. Besides, I love writing about food so it's a win win. Finding ways to ease into more difficult tasks makes me feel safe along the way :)
